The Control Induction French Plancha has one prime objective; consistency resulting in perfect results every time.
The Control Induction French Plancha uses a very thick cooking plate with a complex internal structure of shape and materials which hold the heat in the main cooking zone, bringing heat to the food contact point 5 times quicker than a pan.
Most of the energy input into the French Plancha is not lost in the form of radiation but is retained in the plate and available for cooking, with a heat capacity being 25 times greater than a frying pan. With a power of only 3.5kW or 4kW the French Plancha is incredibly energy efficient. When not in service the French Plancha also doubles as a great stock boiler.
Over the main cooking area the heat is even to within +-3% and heat recovery is ultra-fast after food is placed on the cooking surface. This ensures even and consistent results regardless of the chef's expertise. Using the French Plancha at our recommended heat setting (7) means food cannot be burnt as it won't reach carbonizing temperature.
The plancha is easily cleaned by scraping the surface and washing into the surrounding gully. The waste is collected in a removable drain tray.

Steel or Chrome Plancha?
Advantages of the Chrome Plancha
- Easy to clean with ice cubes!
- VERY low heat radiation so cheaper to run
- Ideal for cooking meat and fish
Disadvantages of the Chrome Plancha
- If overheated the chrome could peel
- Cannot be cleaned with abrasives
- If the chrome is physically damaged it is difficult and expensive to repair
Advantages of the Steel Plancha (available in flat or ribbed)
- Very tough
- Ideal for cooking meat and fish
- Can be heated to 400°C (only applies to our Plancha)
- Lower cost
Disadvantages of the Steel Plancha (available in flat or ribbed)
- Can rust if not oiled or if exposed to acids and alkalis. (Though any marks are easily polished out)
If in doubt go for a steel plancha, it will work well, gives great results and is very difficult to damage.
