Peninsula Induction Suites
Peninsula induction suites are a great configuration, allowing multiple chefs to cook at the same time and be side on to the pass and therefore more aware of what's going on in the kitchen.
Here is the peninsula cooking suite we designed and built for Adam Humphrey, chef proprietor of Arras restaurant in York. This suite was created with an interesting angle of the cooking suite to make it match the kitchen wall. Attention to detail is key when any suites are designed, note the space left at the bottom rear of the stove to allow for waste and water to the combi ovens.
There's often a habit in our industry when planning a kitchen layout, positioning cooklines along a wall. This often renders the space in the middle of the kitchen unusable. We like to challenge this way of thinking, maximising functionality. Robert Thompson's induction stove in his Isle of Wight restaurant started as a wall suite but working with us, we found a way to fit a peninsula suite. The result is a great stove, enabling excellent communication between the Sous Chef, the Chef de Partie and the Head Chef, less verbal communication, finished items closer to the pass which the team say is a "dream to cook on".
